So, I kind of suck at maintaining this thing. In my defense, I moved and then work got a little...crazy...in April. We didn't have knobs on the stove for three weeks because...still not sure, they were gone when we moved in. Which meant a lot of sushi take out since it's really hard to eat fast food and microwavable.
BUT-we have a working stove now! And since it's the end of the month, it also equals Pay Day-which means hard core grocery shopping day.

Quick Lime Cilantro Chicken
Quinoa cooked in homemade chicken broth
Green Beans
Red Wine
The last one is the most important!
Chicken was super easy to make, and I made it without garlic of course and tossed on A TON of chipotle pepper because I like spicy. I can't eat commercial chicken broth, but I try to cook at least one whole chicken in the crock pot each month and save the broth for cooking.
The lime makes it delicious but tart. Five stars. Also, the entire kitchen (which in the new place is HUGE) smells limey now too. Which is a good thing.
Here's what else happened since February:
1. Snow and cold. Worst winter ever. Less worse than Minnesota, though, so I tried not to complain too much
2. Big 12 Tournament in Kansas City with Cylcone Domination! #cyclONEnation
3. St. Patrick's Day...still recovering from KC, so didn't celebrate this year
4. MOVING WEEK-in the rain. Awesome
5. Some work crazy and very little sleep for about a week
6. Easter-Mom made a ham, we had baked potatoes, salad and then I made these (changed to be vegan/GF) for dessert. VERY DELICIOUS!
7. Made a new best friend
